In March 2019, the Macis organic bakery opened its doors – or rather windows. Macis is all about good food and honest products. About respect for food. We let the ingredients retain their innocence, celebrate craftsmanship and want you to taste our love. And we love organic.
Real craftsmanship can be experienced in our bakery. Our customers can more or less look over the shoulders of our bakers and see how bread is made, from the flour to the sourdough to the finished loaf. Our baked goods are made using traditional recipes and methods – you can not only see this, you can taste it too. Artificial additives don’t stand a chance with us.
Our kitchen is the core, the hub, the pivotal point, the pump. Everything that happens here is made exclusively by hand. We serve it on the plates or put it on the shelves to take away. The Macis is basically a large-scale artisan business specializing in food with the kitchen as the engine in the middle.
Good food needs time, pure ingredients need pure recipes. And that’s why we need you!

The new Macis opened its doors in March 2019. With an organic bakery, organic market and market hall as well as an organic restaurant and organic patisserie, a complex structure has been created with currently just over 70 employees. We do our best every day to meet not only our own standards, but also those of our customers. For us, organic is not an ideology, but a quality feature that runs consistently through all areas.

Ralf Mucke
As a trained baker, he quickly returned after a short break in the automotive industry. In London, he showed the British what good German bread is and now he is showing us and you at macis in the open bakery live and in color what good craftsmanship looks like. As a master baker, Ralf is also the trainer for our trainee bakers and will be on hand with help and advice
Toni Kindervater
Our Toni. We could write a lot about him, but unique is probably the best way to describe him. Even in the biggest hustle and bustle, he keeps an overview and remains casually elegant. The great thing is that Toni is a Mace veteran and has already worked for the predecessor Mace. He practically inhaled “Macis-Bio” and now celebrates this every day at Macis 2.0. As a trainer and IHK examiner for specialists in restaurants and event catering, he is also the right contact for all theoretical content of the training.
Olaf Herzig
Our old hand has already cooked for Pope John (no kidding!) and now he’s cooking for you. He loves the classics, especially simple Italian dishes. He is the master of hand-picked ingredients that you can taste individually and that dance together on the palate. As a chef and trainer for young chefs, he may soon be sharing his best-kept recipes with you too.
