On this page we would like to introduce you to a few of our suppliers in more detail. Local sourcing of food is particularly important to us, which is why we pay very close attention to the companies we work with in this area.

Elbweiderind

Sustainably produced beef

On the Elbe near Torgau between Graditz and Pülswerda, farmer Matthias Schneider and his Elbweiderind team have been relying on a unique concept for sustainably produced, natural and healthy beef since 2017. The Herefords live outdoors in the herd all year round. This 100% species-appropriate husbandry and the predominant feeding of pasture grass from our own land has a positive effect on the health of the animals and therefore on the quality of the meat.

In the interests of sustainability, we process the entire animal at Macis – from nose to tail. Some pieces end up in the organic market, other parts at the fresh produce counter in the market hall and, of course, our chefs from the restaurant also grab a few nice cuts. As this is not a mass product, we are only supplied by Elbweiderind once a month. We are happy to take advance orders at mein@macis-leipzig.de.

Landgut Nemt

Fresh dairy products from the Leipziger LAnd region

In the Nemt farm dairy in Wurzen, the best products are made from the milk of its own cows – regional and organic. In addition to fresh milk, this includes traditional dairy products such as organic quark, organic cream cheese, organic yoghurt and organic semi-hard and soft cheese. Artisanal production and natural processing are the guiding principles here – as are freshness and short distances: the milk is processed just a few hours after milking.

Specialty coffee from Leipzig

The Leipzig-based specialty roastery Brühbar refines high-quality, single-origin green coffees. The Scandinavian roasting profile with a light roast brings out the natural, fresh and fruity aromas of the coffee and creates a unique taste experience. For lovers of different preparation methods, Brühbar also offers darker roasts and balanced blends that are perfect for stovetop pots, espresso and fully automatic machines. Brühbar only uses Arabica beans to guarantee maximum enjoyment. Discover the world of specialty coffee and enjoy the variety of flavors in every cup.

METZGER THEISINGER

Organic meat from the Habichtswald-Ehlen Nature Park

The unique Theisinger butcher’s shop is located amidst the picturesque backdrop of the Habichtswald-Ehlen Nature Park. Theisinger’s team is deeply committed to the mission of promoting healthy eating and environmentally conscious, animal-friendly livestock farming. As a family-run “mmh-bio” business, they maintain close relationships with regional organic farms in order to always offer their customers the highest quality and freshness.

Martin Theisinger, the founder, draws on a wealth of experience at the meat counter of large retail chains, where he most recently worked as a department manager at a well-known supermarket. However, the poor quality of the meat and the abuses in animal husbandry led him to make the decision in 2008 to leave the wholesale trade behind and return to the traditional craft. Since 2010, Metzger Theisinger has dedicated himself exclusively to processing first-class organic quality meat from certified regional farms, which gives both himself and us great pleasure.

ROLLE MÜHLE

Sustainable tradition since 1563

Rolle Mühle is a traditional company with roots dating back to 1563. Rolle millers have been harnessing the power of water since the early days of settlement in the Ore Mountains. A small hydroelectric power plant supplies the mill entirely with clean electricity from renewable energy, which avoids the emission of 2000 tons of CO2 every year.

Rolle Mühle produces food without preservatives, with high-quality ingredients and according to its own recipes. The grain is thoroughly checked and milled after being cleaned several times. Specialists and an in-house laboratory ensure the high quality of the products. Rolle Mühle works according to modern food standards and is certified according to EU Organic Regulation 834/2007 and recognized by Bioland, Demeter, Gäa and Naturland.

HofGut Kreuma

Agriculture in the heart of Saxony

This Demeter farm follows a biodynamic approach and regards the farm as a living organism. Handmade preparations are applied to the fields by hand to support the soil organisms and create optimal growing conditions for the plants.

The grain for the baked goods is grown regionally in Saxony and processed in a water-powered mill. To ensure freshness and quality, the grain is ground directly before baking.

HofGut Kreuma stands for sustainable agriculture and a close connection with nature, focusing on the principles of mindfulness and sustainability.

Würth Käse

Quality and trust for over 30 years

The organic cheese wholesaler Würth, under the management of Jürgen Würth, has been a pioneer in organic food for over 30 years. The company is committed to ecology and sustainability in all areas, from organic farming to trading in organic products. Long-standing, trusting relationships with producers and suppliers characterize the cooperation.

As a medium-sized company with more than 20 employees, Biokäsegroßhandel Würth works closely with a renowned refrigerated freight forwarder to ship its high-quality goods.

Savigni

The tradition of the meat trade: the Savigni family from Pavana, Italy

The Savigni family from Pavana, Italy, has been synonymous with passion and dedication to the butcher’s trade since 1985. Fausto, Paola, Nicolò and Mileto not only run a store, but cultivate a long tradition of butchery, where every product is made with love and care. From classic to special matured delicacies, their products are renowned for their quality and variety.

This family are not only producers of meat products, but also custodians of a long tradition of craftsmanship and an ethos of respect for animals. Their commitment extends beyond production and is reflected in proud certifications that attest to their ethical standards and passion for the craft.

Dr. Bürklin-Wolf

Since 1597 - innovators in German viticulture

Dr. Bürklin-Wolf: Tradition and innovation merge in a unique way. The winery has been shaping German wine culture since 1597. Under the management of Bettina Bürklin-von Guradze, it sets pioneering standards in viticulture. The conversion to biodynamic practices in 2005 was a milestone that embodies the top priority of producing top-quality Rieslings in harmony with nature. This decision reflects a deep involvement with biodynamic viticulture.

Through an intensive exchange with other biodynamic winegrowers, the team recognized the groundbreaking effect of this decision. Today, the soils are more vital, the vines more resilient and the wines more differentiated than ever before.
